Ingredients
  

  • 1 tbsp olive oil
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • ½ tsp ground ginger
  • 2 cloves garlic, minced
  • 200 g red lentils, rinsed
  • 750 ml vegetable stock
  • Salt and black pepper to taste
  • Fresh lime juice (optional)

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Add turmeric, cumin, ginger, and garlic and cook for 30 seconds until fragrant.
  3. Stir in red lentils and vegetable stock.
  4. Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are soft.
  5. Blend slightly if desired for a thicker texture.
  6. Season with salt and finish with a squeeze of lime juice if desired.
