Method
- Heat olive oil in a pot over medium heat.
- Add turmeric, cumin, ginger, and garlic and cook for 30 seconds until fragrant.
- Stir in red lentils and vegetable stock.
- Bring to a boil, then reduce heat and simmer for 25 minutes until lentils are soft.
- Blend slightly if desired for a thicker texture.
- Season with salt and finish with a squeeze of lime juice if desired.
