Ingredients
  

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 cloves garlic, minced
  • ½ cup Parsley, chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 150 g yellow lentils (rinsed)
  • 1 tsp dried thyme
  • 1 litre vegetable stock
  • Salt and black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot and celery and cook for 5 minutes until softened.
  3. Add garlic and thyme and cook for 30 seconds.
  4. Stir in lentils and pour in vegetable stock.
  5. Add the chopped parsley and stir.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes until lentils are tender.
  7. Season with salt and pepper and serve warm.
