Method
- Heat olive oil in a large pot over medium heat.
- Add onion, carrot and celery and cook for 5 minutes until softened.
- Add garlic and thyme and cook for 30 seconds.
- Stir in lentils and pour in vegetable stock.
- Add the chopped parsley and stir.
- Bring to a boil, then reduce heat and simmer for 30 minutes until lentils are tender.
- Season with salt and pepper and serve warm.
