Ingredients
  

  • 1 large cauliflower, cut into florets
  • 1 whole garlic bulb
  • 2 tbsp olive oil
  • 750 ml vegetable stock
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 200°C (180°C fan).
  2. Place cauliflower florets on a baking tray.
    3. Cut the top off the garlic bulb, drizzle with olive oil, and wrap in foil.
    4. Roast cauliflower and garlic for 30 minutes until golden and soft.
    5. Squeeze roasted garlic cloves into a pot and add roasted cauliflower.
    6. Pour in vegetable stock and simmer for 10 minutes.
    7. Blend until smooth, season with salt and pepper, and serve warm.
