Ingredients
  

  • 1 tbsp coconut oil
  • 1 small red onion, sliced
  • 1 tbsp fresh ginger, grated
  • 1 tsp mild curry powder
  • 600 g sweet potato, peeled and cubed
  • 400 ml canned coconut milk
  • 500 ml vegetable stock
  • Salt to taste
  • Fresh lime juice (optional)

Method
 

  1. Heat coconut oil in a large pot over medium heat.
  2. Add sliced onion and cook for 4–5 minutes until soft.
  3. Stir in ginger and curry powder and cook for 30 seconds.
  4. Add sweet potato, coconut milk, and vegetable stock.
  5. Bring to a boil, then reduce heat and simmer for 25 minutes until tender.
  6. Blend until smooth.
  7. Season with salt and finish with a squeeze of lime juice if desired.
