Vegan Carrot Soup

A smooth and comforting vegan carrot soup made with wholesome plant-based ingredients.

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 500 g carrots sliced
  • 750 ml vegetable stock
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until soft.
  3. Add garlic and carrots, cook for 2 minutes.
  4. Pour in vegetable stock and bring to a boil.
  5. Reduce heat and simmer for 20 minutes until carrots are tender.
  6. Blend until smooth and season to taste.
