Tomato and Basil Vegan Soup

Ingredients
  

  • 1 tbsp olive oil
  • 2 cloves garlic, sliced
  • 800 g canned chopped tomatoes
  • 1 tbsp tomato purée
  • 500 ml vegetable stock
  • Handful of fresh basil leaves
  • Salt and black pepper to taste

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Add sliced garlic and cook gently for 30 seconds.
  3. Stir in chopped tomatoes and tomato purée.
  4. Pour in vegetable stock and bring to a gentle boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in fresh basil, then blend until smooth if desired.
  7. Season with salt and black pepper and serve warm.
