Low Calorie Vegetable Soup

A light and healthy vegetable soup that’s low in calories but full of flavour.

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 Onion Chopped
  • 2 Gloves Garlic Minced
  • 1 Courgette Diced
  • 1 Carrot Diced
  • 1 Red paper Chopped
  • 750 ml Vegetable stock
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft.
  3. Add garlic and vegetables, cook for 3–4 minutes.
  4. Pour in vegetable stock and bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Season to taste and serve warm.
