Method
- Heat olive oil in a large pot over medium heat.
- Add onion, carrot and celery, cook for 5 minutes until softened.
- Stir in garlic, cumin and paprika and cook for 1 minute.
- Add lentils and vegetable stock, bring to a boil.
- Reduce heat and simmer for 25 minutes until lentils are soft.
- Season with salt and pepper and serve warm.
