Healthy Lentil Soup

A hearty and nourishing lentil soup made with simple ingredients and warming spices.

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 celery stalk diced
  • 200 g dried red lentils (rinsed)
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 litre vegetable stock
  • Salt and black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot and celery, cook for 5 minutes until softened.
  3. Stir in garlic, cumin and paprika and cook for 1 minute.
  4. Add lentils and vegetable stock, bring to a boil.
  5. Reduce heat and simmer for 25 minutes until lentils are soft.
  6. Season with salt and pepper and serve warm.
