Method
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, green peas and celery and cook for 5 minutes until softened.
- Add garlic and cook for 30 seconds.
- Place chicken breasts into the pot and pour in chicken stock.
- Bring to a boil, then reduce heat, add broccoli to the pot and simmer for 25 minutes.
- Remove chicken, shred it, return to the pot, and season before serving.
