Healthy Chicken and Vegetable Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 500 g broccoli florets, cut into bite sized pieces
  • 100 g green Peas
  • 1 celery stalk, chopped
  • 2 skinless chicken breasts
  • 1 litre chicken stock
  • Salt and black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, green peas and celery and cook for 5 minutes until softened.
  3. Add garlic and cook for 30 seconds.
  4. Place chicken breasts into the pot and pour in chicken stock.
  5. Bring to a boil, then reduce heat, add broccoli to the pot and simmer for 25 minutes.
  6. Remove chicken, shred it, return to the pot, and season before serving.
